Gluten Free Peanut Butter Cookies

A simple gluten free Peanut Butter Cookie given to us by one of our customers.


Preheat oven to 350°. Mix ingredients together and roll into 1 inch balls and bake on an ungreased cookie sheet for approx. 8 minutes. Makes 24 cookies

Very tasty cookie, easy and quick to make. (I used Muscavado sugar instead of brown sugar) The cookie came out soft and moist.

Yummy cookie! I used 1/2 brown sugar & 1/2 cane sugar, and substituted ground up oats for the GF flour. I only baked for 7 minutes on parchment paper. They were deliciously moist.

My grandson cannot have peanut butter so I substituted sunflower butter and increased flour by 1/4 cup (just enough to make soft balls) and actually used a fork to make the crisscross. Looks just like a peanut butter cookie and tastes great.

My household loves this recipe! We make it vegan with egg replacer, and add mini chocolate chips! Amazing!!!

Just tried this and it turned out great. I had no eggs, so I added 2 TBsp of applesauce (natural - no preservatives) and increased the time another 2 minutes. You would never know they were gluten free. Kid approved by some very picky children (Lol)

Is only 2 TABLESPOONS of GF baking flour Correct? I've never used Bob's GF baking flour before.

2 tablespoons of GF All Purpose Baking Flour is correct amount of flour required.

I added some semi-sweet chocolate chips. Just awesome. These are at least as good as any other peanut butter cookie I've had, and far better than most.
I didn't have the brown sugar so I used granulated sugar and added just a teaspoon of blackstrap molasses. It was perfect.

Why don't you show Xanthan Gum as one of the ingredients?

Although many gluten free recipes call for xanthan gum, occasionally it is not needed. In the case of our Gluten Free Peanut Butter Cookies recipe, the ratio of peanut butter to flour dismisses the need for xanthan gum.
