These cookies are amazing! I used butter instead of margarine, and a stand-mixer with paddle attachment. Light, moist, and fluffy cookie! These will make a perfect dessert with Chinese food tonight, if they last that long!

I want to try this recipe but don't have any potato starch. Could I use corn starch or potato flour instead?

You may use cornstarch in place of potato starch, one for one. Potato flour and potato starch do not have the same properties and should not be used in place of one another.

I omitted the potato starch and used coconut milk instead of soy. These are delicious! I also sift the flours, makes for a lighter cookie.
