Bulgur & Flax Pilaf

  • 1/4 tsp Italian Herb Blend
  • 1/2 tsp Salt
  • 2 cups Chicken Broth
  • 1 small Tomato, diced
  • 1/3 cup Onion, minced
  • 1/4 cup Brown Flaxseeds
  • 1 cup Bulgur
  • 2 Tbsp Butter

Directions

In a medium saucepan, melt butter over medium heat. Add bulgur, flaxseed and onions. Stir until bulgur is golden brown, about 3 minutes. Stir in tomato, chicken broth, salt and Italian seasonings. Cover, bring to a boil, then lower heat and simmer approximately 15 minutes or until all the broth is absorbed. Fluff Pilaf with fork. Let stand 10 minutes before serving.

I tried this. I made a light version. I omitted butter and salt and sprayed pan instead. Also instead of chicken broth I used water. Also I added 1/4 cup lentils and another cup of water. It was delicious.
