Can this product be used to replace egg yolks. If so what is the ratio of replace to use with water. Many thanks, Melinda

Our Vegetarian Egg Replacer is meant to replace whole eggs and will not function properly when trying to replace only the yolk in a recipe. If you recipe is using egg yolks as a source of fat, you may increase/add 1 Tbsp of fat in place of each egg yolk you replace. If the egg yolks are used as a thickener, you can use blended silken tofu (1 Tbsp. + 1 tsp) in place of each egg yolk. If the egg yolks are being used as an emulsifier, you may use our Soy Lecithin Granules (1 tsp per egg yolk).

Our Vegetarian Egg Replacer is meant to be used in baked goods and will not work in the place of meringue powder.

      Hi Patricia,
If your recipe calls for more than 3 eggs, it is likely that eggs are a very important component in the recipe so it may be more difficult to replace them. They may be giving the recipe structure, acting as a binder, or helping with the rise, so replacing them may have mixed results. Depending on the recipe, you may also consider experimenting with alternative egg replacers like using bananas, flax eggs, or aquafaba.

Hi there, is it possible to use this product to make scrambled eggs, for example? Or is it limited to just adding to baking and other recipes? Thanks.

      Hi John,
Thank you for your question. Our Vegetarian Egg Replacer is meant to replace eggs as a binder in baked good recipes only. It will not replace eggs in scrambles, in custards, or similar.

      Hi Jackie,
Our egg replacers are egg-free so they would be appropriate for someone with an egg allergy as long as the other ingredients meet their dietary needs.
