Tabbouleh

This traditional Middle Eastern dish relies heavily on bulgur and parsley.  A great way to use up that parsley bunch you picked up from the market!  This recipe can be found on our bags of Bulgur.

  1. Combine Bob’s Red Mill Bulgur and boiling water and let soak for 1 hour. Drain well and squeeze out any excess water.
  2. In a large bowl, combine drained bulgur, parsley, mint, scallions, tomatoes, cucumber, salt, cumin, black pepper and lemon juice. Chill for 1 hour.
  3. Immediately before serving, add olive oil and toss well.

    this was a really delicious tabbouleh recipe and i especially liked that it was easy to find on your website. unfortunately i can’t stand tomatoes but included them anyway… i think this can stand on its own without the dreaded tomatoes.
