  1. Combine steel cut oats, yoghurt and milk and soak these together in a blender overnight.
  2. Add salt, cinnamon, baking powder, brown sugar, butter, ground flax seed and eggs or egg substitute to oat mixture. Blend together until smooth. A high quality blender is needed or you can divide the batter in half and blend one half at a time.
  3. Cook in a waffle iron. Top with favorite toppings. Enjoy!



    Serves 8.

    Love this, with a few changes. I add everything but the eggs and leavener to the blender to soak overnight. Makes it much easier in the morning. I highly recommend adding an extra egg, some vanilla, lemon juice, and a half tsp of baking soda, too. With the changes, this is our new favorite waffle. As written, I’d only give it three stars.
