  1. Mix flour, oatmeal, baking powder, salt and soda. Stir in 1-1/2 cups buttermilk, the eggs and butter until smooth. (Stir in a little more buttermilk if batter becomes too thick.) For waffles just add 1 more egg and 1 tablespoon of oil. Makes about 12 pancakes.

    My family loved these! Definitely heartier and more filling than standard pancakes. I reduced fat to 2 T. of canola oil, and the pancakes were still wonderful. Also added a chopped, ripe banana and 2 T. chopped walnuts, because banana-nut anything is a good way to ease folks into eating something that’s 100% whole grain.
