  1. Mix 10 Grain Cereal and milk; allow to stand for 10 minutes while preheating oven and assembling other ingredients; cream sugar, margarine, and egg together. Add dry ingredients and milk mixture. Stir only until mixed.
  2. Spoon into greased muffin pan. Bake at 400°F for 15 minutes.



    Makes 12 muffins.

    One of the best muffin recipes I have ever found. To update to the newest nutritional guidelines, I use butter instead of margarine and often use honey instead of Turbinado sugar. I frequently use this recipe as a base to do RIFFS with other ingredients, such as shredded carrots, pineapple, golden raisins, pecans, coconut and allspice. Another favorite in our house is cranberries, orange peel and walnuts, with a little bit of ground cloves and ginger.
