  1. In a small saucepan bring the water to a boil; add quinoa,

    cover, and reduce heat to low. Cook until liquid is absorbed,

    12 to 14 minutes; set aside.
  2. In a food processor, pulse carrot until finely chopped. Add cooked quinoa, half the scallions, beans, breadcrumbs, egg, cumin, salt, and pepper; pulse until combined but still slightly chunky. Add remaining scallions.
  3. Form mixture into four 3/4-inch-thick patties. If too soft, refrigerate 10 minutes to firm. In a large nonstick skillet, heat oil over medium; cook burgers until browned and cooked through, 8 to 10 minutes per side.

    It’s unclear whether it’s a 1/2 C of cooked or a 1/2 C of unprepared quinoa. Can you clear that up? I made this using a 1/2 C uncooked (which I then prepared & added). It made ~8 patties and they were yummy but did not hold together well at all. When they fell apart in the pan, I also tried baking & microwaving. Microwaving was surprisingly the best method.

      The 1/2 cup of quinoa called for in this recipe is supposed to be an uncooked measure. It will then be prepared in Step 1.
