Pumpkin Gingerbread Loaf with Maple Peanut Butter Glaze

This gingerbread loaf is dense and cake-like for those who love gingerbread outside of the classic cookie form. Pumpkin makes this loaf super moist and the creamy peanut butter maple glaze tops it off. A festive gluten free and vegan treat that everyone can enjoy!

I like dense baked goods, but this loaf turned out extremely stiff with a strange texture. Seemed like it needed a little more moisture in the batter. Glaze has a nice combination of flavor.
