  1. Heat oven to 350°F. Grease muffin tins.
  2. Mix together flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt, cinnamon, and pumpkin pie spice. Stir in pumpkin, applesauce, currants or cranberries and nuts.
  3. Combine milk, beaten eggs and vanilla. Pour liquid ingredients into dry ingredients. Stir until moistened. Do not overmix. Fill muffin tins.
  4. Bake at 350 for 15-20 minutes.



    Makes 15 servings.
Recipe Notes

I store these in the refrigerator. They can certainly be frozen successfully. Wonderful warm with butter melted on them.
