Peanut Butter Chocolate Chip Oat Bars

This back to school season, I’m all about keeping things simple. When I prepare with easy meals, I find I’m much less stressed out in the day to day grind that the new schedule brings. One of my family’s favorite make ahead breakfasts and lunch time snacks are my Peanut Butter Chocolate Chip Oatmeal Bars. These bars are packed with protein and Bob’s Red Mill Oats which are rich in dietary fiber and can help reduce cholesterol. And the best part for busy moms like me? Instructions
  1. In a large bowl, combine peanut butter and honey together. Add oats and mix. Add chocolate chips and mix.
  2. Transfer to a half baking sheet lined with wax paper. Press dough into pan until flat. Refrigerate for one hour.
  3. Cut into bars and store in an air tight container in fridge.
