In a large bowl, combine water and yeast. Let stand a few minutes. Add eggs and oil to mixture and blend briefly. Add GF Pizza Crust Mix and blend about a minute on medium speed, until combined. Leave dough in bowl, split in half, cover with plastic wrap and allow to rise 20 minutes.
Once dough has risen, wrap the dough in plastic wrap and refrigerate. When bread for a sandwich is desired - "flour" hands with tapioca or corn starch. Pull off a section of dough (about the size of a medium orange) and roll in a ball, then flatten into a patty.
Cook patty in a lightly oiled pan on medium heat. When both sides have browned allow to cook for two more minutes on low heat.
When patty is cooked - slice and enjoy as sandwich bread or as a hamburger bun.
