Paleo Waffles with Spiced Coconut Cashew Cream and Blueberries

Next time you have a laid-back morning, treat yourself to these paleo waffles with spiced coconut cashew cream and blueberries.  The super creamy and delicious cashew-based sauce is a great foil for whipped cream, while fresh blueberries add a bright, berry element to the dish.  This dish was served at Feast Portland 2017.

Paleo Waffles
  1. Preheat waffle iron to medium heat for at least 10 minutes. In a large bowl, whisk together all ingredients until smooth. Follow waffle iron manufacturer's instructions for measuring and cooking waffles. Makes 2 waffles.
Spiced Coconut Cashew Cream
  1. Place cashews in a food processor or blender and process until powdered. Add remaining ingredients and process until smooth and creamy. Store chilled.
To Serve
  1. Pour cashew cream over waffles and top with fresh blueberries.
