  1. Preheat oven to 350°F. Line a muffin tin with paper liners and spray with non-stick spray.
  2. In a small bowl, combine Paleo Baking Flour, baking soda, and salt; set aside. In a large bowl, whisk together eggs, coconut oil, honey or maple syrup, and water.
  3. Add flour blend and mix thoroughly. Stir in mix-ins, such as fruit, nuts or chocolate. Spoon batter into prepared muffin tin.
  4. Bake until a toothpick inserted in the center of the muffin comes out clean, about 20–25 minutes. Makes 12 muffins.
Recipe Notes

For these lemon blueberry muffins, gently mix 1 cup fresh or frozen blueberries and 1 Tbsp grated lemon zest into the prepared muffin batter.

      Hi Jenn,
      Any “Paleo friendly” oil would be fine to substitute for the coconut oil in this recipe.

    Why so much sweetener? Is it necessary to offset the protein powder? Or could it be made with 1/3 to 1/2 the amount? Could a product like Stevia Baking Blend be used? Or should it be a brown sugar to aid in giving it the gooey texture?

      Hello,
      You can adjust the honey/maple syrup portion of the recipe to 1/2 cup if you like, but you may need to add additional liquid to compensate. Our Paleo Baking Flour contains coconut flour which is very fibrous and will absorb significant amount of liquid, so if you remove 1/4 cup of sweetener you may need to increase the water/liquid portion to achieve the right consistency. We would not suggest using Stevia as we have not tested for this substitution and it may effect the texture of the baked muffins. This recipe does not include protein powder.

    What is the calorie content per a muffin? I am doing 100% paleo but am also reducing calories for that extra assist for weight loss. BTW – these muffins are fantastic – I love the taste. I used the honey and added blueberries. I’ll be making them again.
