Preheat oven to 325°F. Line the bottom of an 8-inch round cake pan with parchment paper and spray sides with pan spray.
In a small bowl, combine Paleo Baking Flour, baking soda, and salt. In a large bowl, whisk together eggs, coconut oil, honey or maple syrup, and vanilla extract. Add dry ingredients and whisk thoroughly.
Transfer mixture to the prepared cake pan and smooth evenly. Bake until a toothpick inserted in the center of the cakes comes out clean, about 30–35 minutes.
Let cool before decorating or slicing. Make one 8-inch round cake.
For a paleo-friendly chocolate ganache, melt together 4 oz of dark chocolate with 1/2 cup canned coconut milk. Whisk until smooth and drizzle over cake.
