  1. Preheat waffle iron to medium-high.
  2. In a large bowl, whisk together flour, oats, sugar, baking soda, cinnamon and salt.
  3. In a separate bowl combine milk, yogurt, eggs and butter. Pour into dry ingredients and stir to combine.
  4. Place batter into the heated waffle iron. Cook until golden brown. May be made ahead and frozen.

    Modified the Recipe. Came out amazing!

    – 1-2/3 cups Gluten Free 1-to-1 Baking Flour
    – 1 cup Gluten Free Quick Rolled Oats
    – 3 Tbsp Organic Coconut Sugar
    – 3/4 tsp Baking Soda
    – 1/2 tsp ground Cinnamon
    – 1/2 tsp Kosher Salt
    – 1 cup milk of choice (dairy, almond, etc)
    – 3 large Eggs (separate whites from yolks)
    – 1/4 cup Butter melted and cooled slightly (keep extra out for waffle iron)
    – 1/2 tsp Vanilla
    – 1/2 cup Blueberries

    Instructions

    – Preheat waffle iron to medium-high.

    – In a large bowl, whisk together flour, oats, sugar, baking soda, cinnamon and salt.

    – Separate egg whites and whisk them with vanilla using electric mixer until they form stiff peaks.

    – In a separate bowl combine milk, yogurt, eggs yolks, and butter with mixer on medium setting.

    – Fold in stiff egg whites into wet ingredients with a soft spatula.

    – Pour wet ingredients into dry ingredients and stir on lowest mixer setting to combine.

    – Butter the heated waffle iron once ready and place batter on waffle iron. Cook until golden brown (can be darkened, but still fluffy).
