  1. In a microwave-safe coffee mug, mix together flaxseed meal, sweetener of choice, baking powder, cinnamon and salt.
  2. To dry ingredients, add egg and oil and mix well.
  3. Microwave on high power one minute. Run a knife around edge of cup to loosen muffin, turn out onto a plate, add butter and jam, and ENJOY!



    Makes 1 serving.
