  1. Preheat oven to 400°F, set aside an un-greased baking sheet.
  2. In a mixing bowl place wheat-free biscuit mix and cut in butter with pastry blender.
  3. In another bowl mix together the honey, eggs, lemon rind, lemon juice and water.
  4. Add liquid mixture to the dry ingredients and stir with fork.
  5. Turn dough out onto a lightly white rice floured surface and knead 10 times.
  6. Pat dough into round shape 1" thick and brush with lemon juice; sprinkle with 1 tablespoon of granulated sugar.
  7. Cut into 8 wedges and place onto baking sheet. Bake for 20 minutes.

    Which gluten free biscuit and baking mix? New or old? Different ingredients – any impact on results?

      Hi Jim,
      Thank you for your question. This recipe originally used our previous Biscuit and Baking Mix, but the new mix can be used in the same quantity. It will yield a lighter texture and flavor as it includes new ingredients.
