Jacob’s Lentil Stew

This recipe was inspired by the Old Testament story of Esau who traded his inheritance to his brother Jacob for a bowl of lentil soup.  This recipe can be found on our bags of Red Lentils.

  1. Heat 2 Tbsp oil in a pot over medium heat. Add onion, carrot and celery and sauté until soft and beginning to caramelize, 7 - 10 minutes. Add garlic and sauté until fragrant, 1 – 2 minutes.
  2. Add Bob’s Red Mill Red Lentils and Pearl Barley, cumin, parsley, bay leaf, vegetable broth and cilantro. Cover and bring to a boil; reduce heat and simmer until barley is soft, about 60 minutes.
  3. Remove from heat, discard bay leaf and finish with lemon juice.

    I water sautéed instead of using oil. I substituted the vegetable broth with 4 c juiced organic carrots and 4 cups of organic salt free veggie broth. I put in another quarter cup of the barley. I used 2 bay leaves. I doubled the garlic. The pot of soup was gone in less than 24 hours and everyone said best soup ever!! Love lentils! They protect so much against cancer!

    So glad I tried this recipe from the back of the bag of Bobs’ red lentils. It is simple to make and so delicious. First time I’ve used cumin. Incredible flavor. Looking forward to trying more of Bobs’ recipes.
