Heather’s Favorite Spelt Flour Crepes

I substituted the ‘light’ spelt flour…for white flour…and my husband and kids LOVED the crepes! They said they were so much lighter and flavorful. This recipe was not tested by Bob’s Red Mill. Lactose Free*, Low Cal, Low Sugar, Soy Free, Vegan.*

  1. Mix spelt flour, salt and sugar in a large mixing bowl and make a well in the center. Combine eggs, butter (or coconut oil or grapeseed oil) and buttermilk (or soy or almond milk). Add the wet to the well in the dry ingredients.
  2. Mix everything together well with a whisk. Batter should be the consistency of thin cream so if if it seems too thick to pour, add a little more buttermilk.
  3. Heat up a crepe pan or large griddle pan and pour one soup ladle size full of batter into the hot pan. Lift and swirl your pan around to coat the entire surface of pan with batter. It should be nice and thin. Let crepe cook about 1 min. on med heat until you see the edges get a bit brown and curl slightly. Flip crepe and cook just under a minute to finish.
  4. Serve hot of the griddle with pure Grade B Maple Syrup (that\'s my favorite) or, strawberry jam, orange marmelade, powdered organic sugar & a squeeze of lemon, etc. These are great lunch or dinner crepes too with a savory filling and also work well for blintzes. You can make them ahead and freeze them between layers of waxed paper.

    Delicious! I use grapeseed oil, honey, and unsweetened almond milk instead of sugars and milk. It taste better than expected!
