Healthy Fiber Muffins

These muffins are so full of fiber all you need is one a day; even my teen daughter loves them! I freeze them and take a few out at a time. Sometimes I double the recipe. This recipe was not tested by Bob’s Red Mill. High Fiber, Low Cal.

  1. Sift all dry ingredients.
  2. Mix wet ingredients.
  3. Stir wet ingredients with dry by hand! Fold in the apple and carrots.
  4. Stir in the nuts, raisins and dates. (I like to use 1/2 cup chopped dates, 1 cup chopped roasted pecans, and 1/2 cup raisins or chopped dried cherries).
  5. Spray muffin tins, fill 3/4 with ingredients and bake for 30 minutes in a 375°F oven.



    Makes 24 muffins.
Recipe Notes

I sometimes make a glaze with powdered sugar and orange juice, pinch of butter and vanilla. Use the rind from orange shredded into wet ingredients. Freeze in plastic bags or Tupperware and take a few out every day.
