  1. Place all ingredients into mixing bowl, add enough water, 1 teaspoon at a time to mix dough into a ball. Cover with towel and let rest for 45 minutes.

    Roll out very thin. Let rest for 20-30 minutes. Cut into noodles by rolling up and slicing with a sharp knife or use a pasta or pizza cutter. Cook in boiling water for 12-15 minutes. Drain and add butter or 1 tablespoon of olive oil.

    A pasta machine is a luxury, but gives a uniform thickness and size to noodles, spaghetti or macaroni. Makes 8 servings.

    I’ve used this recipe a few times with good results. I make my noodles about 1.5″ wide and keep them rolled up to use in an old family soup recipe–I have to cook them a little longer, but it is worth it. Thanks for the recipe!
