  1. Heat oven to 350°F. Line a 13 x 9-inch pan with foil and grease foil.
  2. Microwave the chocolate and shortening in a large microwaveable bowl on high for 1-1/2 minutes or until the coconut oil is melted. Stir until the chocolate is melted. Stir in the sugar, followed by the eggs and vanilla. Add the flour, xantham gum and nuts and mix well. Spread into prepared pan.
  3. Bake for 30 minutes or until a toothpick inserted in the center comes out with fudgy crumbs. Cool completely, then lift the brownies from the pan by using the foil. Cut and serve.



    Makes 24 brownies.

*If you are not on a soy free diet, you can use soy margarine, or regular vegetable shortening.
