  1. In the bread machine pan, add the ingredients in the suggested order by the manufacturer. Select the basic bread setting. Choose the crust color and the 1-½ lb loaf size. Bake according to bread machine directions.

    Wow, I was so excited to bake this bread in my new Cuisinart Bread maker. I followed the instructions exactly and used unbleached white all purpose flour instead of bread flour. The end result smells great but the 1 1/2 lb loaf completely deflated in the middle of the top. It looks so sad. Any ideas what went wrong?

      When bread falls in the middle after baking, it is usually an indication of over-proofing and under-baking. Next time, try decreasing the amount of time you let the dough rise by about 10 – 15 minutes and increase the baking time anywhere between 5 – 20 minutes. This may require adjustments to be made to the settings of your bread machine.
