  1. Mix all the dry ingredients in a large bowl. Combine completely.
  2. Stir in the zucchini, milk, egg and vanilla until just combined.
  3. Scoop into muffin pan.
  4. Bake for 18-20 mins at 350 degrees.



    Makes 12 muffins.
