  1. Preheat the oven to 350°F. Oil a loaf pan.
  2. Mash the bananas in a small bowl. Mix the Stevia and lemon juice into the mashed bananas and set them aside. Mix the flour, baking soda, baking powder and salt together in a bowl.
  3. Beat the oil and egg together in a mixing bowl until creamy. Beat in the yogurt and vanilla. Stir the mashed bananas into the liquid mixture. Fold the dry ingredients into the wet ingredients, stirring as little as possible. (Mix in the walnuts just before the flour is completely blended).
  4. Pour batter into loaf pan. Bake for about 50 - 60 minutes until a toothpick or knife stuck in the middle comes out clean. Turn out the loaf and cool on a rack.



    Makes about 16 servings.
Recipe Notes

With the autum season upon us, I also used this recipe to make pumpkin bread - substitute 1 cup of canned pumpkin for the bananas, add 1 Tbsp pumpkin pie spice and reduce the baking time by 5 - 10 minutes.

    I made the banana bread first with bananas; that was pretty good.
    Then I tried the pumpkin; I WOULD NOT ADVISE IT. The bitterness of the pumpkin pie spices to no go well with stevia which also has a bitter undertaste.
