  1. Heat oven to 350°F. Lightly coat bread pan with spray oil.
  2. In a mixing bowl, combine dry ingredients (Low Carb Baking Mix, baking powder, nutmeg and sweetener). Make a well in the center of the dry ingredients and add the oil, eggs, water and vanilla. Mix with a fork or whisk until blended, approximately one minute.
  3. Spread batter evenly into bread pan. Bake 50-60 minutes. Serve warm with your favorite butter or cheese.



    Yield: About 16 Slices.

      Thank you for the suggestion, Nancy. If you would like to add fruit I would suggest adding 1/4 – 1/3 cup approximately of drained berries, pineapple, apple, or similar. You could also substitute one of the eggs with a mashed whole banana.

    Would this work in a 1lb bread machine? How is the texture if following the recipe? Because the low carb bread mix was quite hard and too much carb per slice still for Keto diet. Thanks

      Hi Brenda,
      This recipe will work best made by hand as there is less chance of over mixing. If you do use a machine it will work best in a 1-1/2 pound size machine using a quick bread setting. The texture of this bread will be similar to the Low Carb Bread made with yeast as it uses the same blend of flours.
