  1. Pre-heat oven to 375°F. Line a muffin tin with paper liners or grease well with butter or oil.
  2. Mix dry ingredients in a bowl and set aside. Melt butter in sauce pan on low heat.
  3. In a large bowl add eggs and beat together. Add milk, melted butter, maple syrup and smashed banana to eggs and mix well. Add dry ingredients to wet ingredients and gently fold in blueberries.
  4. Bake for 25 minutes until the tops spring back when lightly touched.

    I followed this but substituted flaxseed meal and water as egg replacement, 1 cup pumpkin instead of banana, and 1 c dried cranberries in lieu of blueberries, and palm oil instead of butter. This made a nice vegan winter muffin. A bit on the dense side and more spice and some chopped nuts needed next time around.
