When I bought the Low-Carb Baking Mix I really wanted to make some biscuits with it. So I decided to experiment with it. This recipe was not tested by Bob’s Red Mill.

  1. Melt the butter in a 1 cup microwave safe bowl in short 10 second intervals until completely melted.
  2. Add salt and baking mix.
  3. Add milk and stir; the baking mix should completely incorporate into a dough that should be slightly stiff and in no way runny.
  4. Spray a baking sheet/tray with a spot of nonstick spray and drop the dough on top, shape as you like.
  5. Bake at 350°F for 15 minutes.
Recipe Notes

My dough was about 3/4 inches thick and made a great multi-grain flavored biscuit. I wouldn't eat it by itself (because I'm so used to regular biscuits) but it was great with some jam or eggs on top of a half.

It holds up well and isn't at all crumbly so it would make a good sandwich biscuit.

    I used buttermilk and added a touch of baking powder and baking soda, but it still didn’t rise very much. It was very tasty, however, and an excellent conveyance for my chicken a la king. Love having a recipe for single serving.
