Instructions
  1. Bring 2 cups of water to a boil in a medium size pot and add in the quinoa. Stir, add on the lid and cook over medium-low heat for 12 minutes or until tender.
  2. Loosen the cooked quinoa with a fork and chill until cold.
  3. Add the almond milk, yogurt, bananas and honey to a blender and puree until smooth. Set aside.
  4. Evenly divide the chilled quinoa into 3 2-cup mason jars and add 1 ½ tablespoons of chia seeds to each.
  5. Stir in the banana almond liquid until combined. Seal with the mason jar lid and chill over night.
  6. Garnish with fresh fruit and nuts.

    This makes a lot! How long will it keep three days if there is only 1 person eating it?
    Also, do you have the nutritional breakdown for this, by chance?

      Hi Bethann,
      I emailed you directly regarding the nutritional information. You can keep this for one or two days, but it might start to oxidize and become a bit mushy after that. You can also cut the recipe in half if you only want a few servings.
