  1. Preheat oven to 350°F. Lightly oil a 9x13-inch baking pan; set aside.
  2. Stir together the cooked rice, apples, sugar, and lemon juice in a large mixing bowl. Pour mixture into prepared pan. Set aside.
  3. In a small bowl mix cinnamon, salt, rice flour, oats, and brown sugar. Cut in butter until crumbly. Sprinkle cinnamon mixture over rice-apple mixture. Bake for 30 minutes, or until golden brown and bubbly.



    Makes 18 Servings.
Recipe Notes

Alternative method: Ms. Timmy Lanse recommends using 1-1/2 cups White Rice Flour and 3/4 cup Cornmeal in place of the flour and oats in the recipe. The apple/raisin juices bubble up into the cornmeal producing delicious results!
