  1. Cover beans with water. Bring to a boil and boil for 2 minutes. Cover pan and let stand for 1 hour.
  2. Meantime saute chopped onions, green pepper and garlic in the olive oil for 5 minutes. Add to the beans along with the bacon and seasonings. Bring to a boil and simmer until beans are tender, about 45 minutes to one hour.
  3. Add more water if needed. When beans are done, add wine vinegar and serve with steamed rice.



    Serves 6 to 8.
