  1. In a medium bowl, beat egg. Then beat in juice and oil.
  2. Add remaining ingredients to egg mixture one by one, beating after each addition.
  3. Heat griddle to medium high and cook until bubbly; turn and cook until done.



    Makes 10 - 3 inch pancakes.

    For those who are also intolerant to eggs, it is possible to modify this recipe by increasing the dose of milk ( macadamia milk is dairy free and good!) to 1 cup and 1/4 and add vegetable oil or vegetable butter ( 2-3 tablespoons)
    The pancakes might be a bit thinner but great taste.

      I did not get good results with this alteration using more milk and oil. I used almond milk and my pancakes tasted uncooked despite being browned on both sides. They were runny in the first batch and so I tried again with a lot less milk and they were thin but gummy inside. It’s too bad because I can’t have eggs presently.
