  1. Preheat oven to 350°F. Lightly grease a cookie sheet, set aside.
  2. Combine oil, honey, water and orange or lemon peel in saucepan. Heat gently to melt honey and remove from heat to cool.
  3. Sift flours before measuring. Combine dry ingredients and sift again. Stir vanilla into liquids, then add dry ingredients. Fold in dates and nuts.
  4. Drop batter by rounded teaspoon onto prepared cookie sheet.
  5. Bake 12 - 15 minutes, until cookies are golden. Remove to wire rack to cool.



    Makes about 2 dozen.

    These were delicious!! I made these a little different. I used organic date syrup in place of the honey and chopped up dried plums and used lemon zest as well.

    These aren’t going to be your grocery store super sweet chemical cookies. These taste earthy, flavorful and homemade. 🙂
