  1. Combine 8 Grain Hot Cereal and soy milk and let soak for about 10 minutes to soften. Preheat oven to 350°F and grease a muffin tin or line with paper cups.
  2. Meanwhile, combine the remaining dry ingredients in a small bowl. In a large bowl, whisk together eggs and coconut oil.
  3. Add soaked cereal and soy milk to egg mixture then gently mix in dry ingredients, taking care not to overmix.
  4. Portion into prepared muffin tin and bake at 350°F for 20 - 22 minutes.
