  1. Put approximately 11 ounces (1-1/4 cups plus 2 Tbsp) warm tap water into machine. LOCATE AND REMOVE THE ENCLOSED YEAST PACKET. Add the contents of the package of 100% Whole Wheat Bread Mix, 2 Tbsp canola (or other) oil and contents of yeast packet. Put machine on basic white bread or medium setting. Turn on machine. Check mix during first 5 minutes of mixing cycle. If mixture is too dry, add another tablespoon or two of water. Note: too much water will cause "craters" (a dip in the top). (Caution: Be sure your machine will handle whole wheat flours. Check your manual).
By Hand Instructions
  1. LOCATE AND REMOVE THE ENCLOSED YEAST PACKET. Add contents of the yeast packet to the mix. Combine the 100% Whole Wheat Bread Mix, 2 Tbsp canola (or other) oil and approximately 11 ounces (1-1/4 cups plus 2 Tbsp) warm tap water. Knead 8 - 10 minutes. Place in a greased bowl, cover and let rise in a warm place until doubled (approx. 1-1/2 hours). Punch down, cover & let rise in a warm place until doubled (approx 30 - 45 min). Form loaf and place in a greased 9 x 5 x 3 bread pan. Grease top of loaf. Cover with plastic wrap and let rise in a warm place until doubled (approx 45 minutes). Bake at 375°F for 30 - 40 minutes. Thump top of loaf. A hollow sound indicates a properly baked loaf. Turn out of pan, cover with a towel and cool before slicing.

      To prepare our 100% Whole Grain Bread Mix as a 1 lb loaf use the following ingredient measures:

      2 cups bread mix
      ¾ cup- 7/8 cup water
      4 tsp Oil
      2 tsp. active dry yeast

    I would like to make rolls instead of a loaf. What is the best way to do this and how long do they bake?

      To prepare our 100% Whole Wheat Bread Mix as rolls, follow the instructions for the “By Hand Instructions”. After the second rise, punch down and form the dough into golf ball sized rolls instead of a loaf. Line a baking sheet with parchment paper and place the rolls. Allow the rolls to rise until they double in size. Bake at 350ºF for approximately 15 to 20 minutes.

    Can I use this mix to bake no-knead bread? If it’s possible, how much water should I mix and how long should I let it rise?

      Hi Kinya,
      We have not tested this mix as a no-knead recipe, but if you want to try this method, you may want to follow the directions from a recipe like this one from our blog. You may need to add some additional water- possibly 1/4-1/2 cup more than the recipe on the bag calls for.
