Chicken & Garbanzo Bean Soup with Spinach

  • 1/2 lb Fresh Spinach, cleaned, stems removed & thinly sliced
  • 6 cups Chicken Broth
  • 1 medium Carrot, coarsely chopped
  • 1 small Onion, finely chopped
  • 1 lb Boneless, skinless chicken breast, cubed
  • 1 tsp Marjoram
  • 1 - Garlic Cloves, minced
  • 1 pinch Sea Salt
  • 1 pinch Pepper
  • 1 cup cooked Garbanzo Beans

Directions

Place carrot, onion and chicken broth in a large soup pot. Bring to a boil; then simmer for 10 minutes, uncovered. Add chicken meat, marjoram, garlic and salt and pepper. Continue to simmer for 10 minutes; add cooked beans; add spinach and cook for 2-4 minutes. Serve hot.

Makes 6 servings.
