Chocolate Cake Gluten Free


Preheat oven to 350°F. Grease a 11" X 7" nonstick pan. Set aside. Place all ingredients, except coffee, in large bowl and blend with electric mixer. Add coffee and mix until thoroughly blended. Pour into prepared pan and bake for 30-35 minutes or until toothpick inserted in center of cake comes out clean. Serves 12.

Really moist and easy to make cake.

Two modifications 1-hot water instead of coffee, and, 2-cupcakes. Baked for 25 minutes. They were great. Next time I'll add chocolate chips. (I am the only one with gluten issues. I want there to be more options to enjoy together.) Husband declared it a success. What do the kids think?

I made this with a few substitutions:
1/2 cup honey for the cup of sugar
coconut oil for the butter
three tblsp of apple sauce for the egg
and hot water for the coffee.
Turned out great! Nice flavour, nice texture :)
