Flaxseed Meal Pancakes


Sift together the dry ingredients (whole wheat pastry flour through flaxseed meal). Combine the egg and milk and add to the flour mixture, blend together.

Pour batter onto a medium hot seasoned griddle and cook until bubbles are well-formed around edges of the pancakes; flip and cook the other side until golden brown. Serve with your favorite topping.

Makes 12 pancakes.

I made these this morning. I substituted maple syrup and used coconut milk. The pancakes were heavy and thick but they cooked through without a problem. The pancakes had a nutty flavor and were very good! I will make these again, but probably add a little more milk.

We loved them! Hearty breakfast for dinner... although I used half whole wheat flour (not pastry) and half all-purpose, and 1 and 3/4 cup almond milk (thanks to PP). I found them hearty but not too dense. It's definitely a keeper for our family.

As others were saying, it seemed dense going in the pan, but cooked through like a charm. They were great with fresh blueberries!
