Anasazi Beans and Rice

This recipe can be found on our bags of Anasazi Beans. High Fiber, Lactose Free, Low Sugar, Soy Free.

  • 2 cups (washed and drained) Anasazi Beans
  • 1 cup Chopped Onion
  • 1 Green Pepper, Chopped
  • 1 Garlic Clove, Minced
  • 1 Slice Bacon, minced
  • 1/4 tsp Pepper
  • 1/4 cup Wine Vinegar
  • 1/2 cup Olive Oil
  • 2 Bay Leaves
  • 2 tsp Salt
  • 1 cup cooked Long Grain White Rice or Long Grain Brown Rice

Directions

Step 1

Cover beans with water. Bring to a boil and boil for 2 minutes. Cover pan and let stand for 1 hour.

Step 2

Meantime saute chopped onions, green pepper and garlic in the olive oil for 5 minutes. Add to the beans along with the bacon and seasonings. Bring to a boil and simmer until beans are tender, about 45 minutes to one hour.

Step 3

Add more water if needed. When beans are done, add wine vinegar and serve with steamed rice.

Serves 6 to 8.
