DirectionsStep 1Cover beans with water. Bring to a boil and boil for 2 minutes. Cover pan and let stand for 1 hour.Step 2Meantime saute chopped onions, green pepper and garlic in the olive oil for 5 minutes. Add to the beans along with the bacon and seasonings. Bring to a boil and simmer until beans are tender, about 45 minutes to one hour.Step 3Add more water if needed. When beans are done, add wine vinegar and serve with steamed rice.Serves 6 to 8. |
