Quinoa Tabbouleh

This recipe can be found on our bags of Organic Quinoa Grain. Whole Grain! Gluten Free, High Fiber, Lactose Free, Low Sugar, Organic, Soy Free, Vegan.

  • 2 cups cooked & cooled Organic Quinoa Grain
  • 1 cup chopped Parsley
  • 1/2 cup chopped Scallions or Green Onions
  • 2 medium Tomatoes, cut into 1/4-inch dice
  • 2 Tbsp chopped fresh Mint (or 1 tsp.dried)
  • 1 Garlic Clove, minced or pressed
  • 1 Tbsp minced fresh Basil (or 1/2 tsp. dried)
  • 1/2 cup fresh Lemon Juice
  • 1/4 cup Extra Virgin Olive Oil
  • 1/4 tsp Salt
  • 1/8 tsp White Pepper

Directions

Toss together all ingredients. Chill for 1 hour or more to allow flavors to blend.

Makes 6 servings.

This is such an easy recipe that turns out delicious each time! A great gluten free option for taboule. It tastes really good with some feta, chopped chicken breast, cucumber and cherry tomatoes tossed in.

I think you mean 2 cups of cooked and cooled Quinoa, not 12! At least that is what the back of the bag says.

are you sure 1/2 cup lemon juice. I make the receipe on the back
of the back. Very tart. Would not bake this again.
