DirectionsStep 1Preheat oven to 350°F. Lightly oil a 9-inch square baking dish.Step 2Combine nuts, amaranth flour, arrowroot starch, baking soda and salt in a large bowl and set aside.Step 3In a blender or food processor, combine banana, honey, eggs, oil, lemon juice and vanilla extract and process for 30 seconds.Step 4Pour the liquid mixture over the dry mixture and gently stir together. DO NOT BEAT.Step 5Pour into the prepared pan and bake until the top springs back when touched in the center and a toothpick test comes out dry, about 40 minutes.Makes 12 servings. Notes*Process nuts to a fine grind in a blender or food processor. Or, use a premade meal like Bob’s Red Mill Hazelnut Meal. |
