Banana Nut Cake

The recipe contains no corn, wheat, yeast, milk or gluten- but it's still very tasty. Gluten Free, High Fiber, Lactose Free.


Step 1

Preheat oven to 350°F. Lightly oil a 9-inch square baking dish.

Step 2

Combine nuts, amaranth flour, arrowroot starch, baking soda and salt in a large bowl and set aside.

Step 3

In a blender or food processor, combine banana, honey, eggs, oil, lemon juice and vanilla extract and process for 30 seconds.

Step 4

Pour the liquid mixture over the dry mixture and gently stir together. DO NOT BEAT.

Step 5

Pour into the prepared pan and bake until the top springs back when touched in the center and a toothpick test comes out dry, about 40 minutes.

Makes 12 servings.


*Process nuts to a fine grind in a blender or food processor. Or, use a premade meal like Bob’s Red Mill Hazelnut Meal.
