Ruthie's 8 Grain Muffins


Mix Bob's Red Mill 8 Grain Cereal and milk; allow to stand for 10 minutes while preheating oven and assembling other ingredients. Cream egg, margarine and sugar together.

Add dry ingredients and milk with cereal to egg mixture. Stir only until combined. Spoon into greased muffin pan. Bake in 400° F oven for 15 minutes.

Makes 12 wonderful muffins.

These muffins are wonderful there tender and nutty and went well with my dinner tonight. I will definetly make them again and again!

I vegan-ized this recipe using almond (or coconut) milk, a flax egg, unrefined coconut oil and pumpkin (and have also added chopped pecans, chia seed and hemp seed) and they turn out fantastic every time. My husband isn't vegetarian, and he loves them.
