Directions
Sift together dry ingredients into a bowl.
Add egg, milk and butter. Beat until smooth, about one minute. Do not overbeat. Preheat oven to 425°. Bake in a greased 8-inch square pan for 20-25 minutes. Serve warm with butter and a beaming smile. Makes 9 servings. |

This is my go-to cornbread recipe and it never fails. Sometimes I add a can of sweet corn kernels, sometimes some pepper and/or even some chili pepper.

Medium grind gives the corn bread a crustier consistency that is perfect for dipping in soup. I added 2 chopped jalapeno peppers and grated sharp cheddar cheese to the batter and it was perfectly spicy. Baked in iron skillet at 400 and it was done in 20 minutes. Very tasty corn bread.
