Flageolet Beans with Herbs

  • 1 Tomato large sized, ripe, peeled and diced
  • 1 Onion with 2 Cloves
  • 1 Carrot
  • 1 Celery stalk
  • 4 sprigs Parsley
  • 1-1/2 tsp Thyme
  • 1-1/2 tsp Savory dried
  • 1 Bay Leaf
  • 1 Tbsp Unsalted Butter
  • 1 tsp Garlic cloves, chopped
  • 1 Tbsp Shallots chopped
  • 1/4 cup Cream light
  • 1 cup Flageolet Beans

Directions

Prepare Beans: Rinse beans. Pour 5 cups boiling water over beans in a large pot, cover and leave for one hour. Drain, rinse and add 6 cups of water with the onion, carrot, celery, parsley, thyme, savory, and bay leaf. Bring to a boil and simmer, partially covered for 25 minutes, or until beans are tender. Then discard onion, carrot, celery, parsley and bay leaf.

Prepare Casserole: Melt butter, add garlic and shallots, cooking until soft. Add to beans along with cream and tomato, and simmer until hot stirring occasionally (3-5 minutes). Garnish with parsley.

Makes 4 servings.
