Bob's Red Mill Low Carb Focaccia

Low Carb

  • 1 Yeast Packet (included with bread mix)
  • 16 oz 3-1/2 cups Low-Carb Bread Mix
  • 1 Egg
  • 2 Tbsp Canola Oil
  • 3/4 cup Light Whipping Cream
  • 1/2 cup Water + 3 Tbsp

Directions

Bread Machine: Follow bread recipe provided on package but set bread machine on pizza crust setting. After pizza crust cycle is done, roll in circular shape to desired thickness. Let rise for 10 minutes. Punch random holes in focaccia with finger. Brush with olive oil. Season with salt, fresh ground pepper, granular garlic, and basil or other preferred seasonings. Bake at 350 degrees Fahrenheit for 10 minutes.


By Hand: Follow bread recipe provided on package. After dough rises to double, roll out in circular shape to desired thickness. Let rise 10 minutes. Punch random holes in focaccia with finger. Brush with olive oil. Season with salt, fresh ground pepper, granular garlic, and basil or other preferred seasonings. Bake at 350 degrees Fahrenheit for 10 minutes.

The dough contains a lot of gluten, which makes it hard to get thin enough, but letting it rest for 5 minutes a couple of times during the process helped. Baking time was 15 minutes, not the 10 given in the recipe. The flavor is great, though!
