DirectionsStep 1Heat oven to 350°F. Lightly coat bread pan with spray oil.Step 2In a mixing bowl, combine dry ingredients (Low Carb Baking Mix, baking powder, nutmeg and sweetener). Make a well in the center of the dry ingredients and add the oil, eggs, water and vanilla. Mix with a fork or whisk until blended, approcimately one minute.Step 3Spread batter evenly into bread pan. Bake 50-60 minutes. Serve warm with your favorite butter or cheese.Yield: About 16 Slices. |

Even my kids (who have been making fun of our low carb diet) liked this :). It was very interesting having a 'quick bread' turn out very similar to a yeast bread (more chewy, though). It was easy to make, and I plan on making it again.
