Bob's Red Mill Low Carb Quick Bread

Low Carb Quick Bread.

  • 3 cups Low-Carb Baking Mix
  • 3 Tbsp Canola Oil
  • 3 Eggs
  • 1-1/2 cups Water
  • 4-1/2 tsp Baking Powder
  • 7 packets of your favorite Low Carb Sweetener
  • 1-1/2 tsp Vanilla Extract
  • 1 tsp Ground Nutmeg

Directions

Step 1

Heat oven to 350°F. Lightly coat bread pan with spray oil.

Step 2

In a mixing bowl, combine dry ingredients (Low Carb Baking Mix, baking powder, nutmeg and sweetener). Make a well in the center of the dry ingredients and add the oil, eggs, water and vanilla. Mix with a fork or whisk until blended, approcimately one minute.

Step 3

Spread batter evenly into bread pan. Bake 50-60 minutes. Serve warm with your favorite butter or cheese.

Yield: About 16 Slices.

Even my kids (who have been making fun of our low carb diet) liked this :). It was very interesting having a 'quick bread' turn out very similar to a yeast bread (more chewy, though). It was easy to make, and I plan on making it again.
