Bob's Red Mill Low Carb Quick Bread

Low Carb Quick Bread.

  • 3 cups Low-Carb Baking Mix
  • 3 Tbsp Canola Oil
  • 3 Eggs
  • 1-1/2 cups Water
  • 4-1/2 tsp Baking Powder
  • 7 Low Carb Sweetener (packets)
  • 1-1/2 tsp Vanilla Extract
  • 1 tsp Ground Nutmeg

Directions

Step 1

Heat oven to 350°F. Lightly coat bread pan with spray oil.

Step 2

In a mixing bowl, combine dry ingredients (Low Carb Baking Mix, baking powder, nutmeg and sweetener). Make a well in the center of the dry ingredients and add the oil, eggs, water and vanilla. Mix with a fork or whisk until blended, approcimately one minute.

Step 3

Spread batter evenly into bread pan. Bake 50-60 minutes. Serve warm with your favorite butter or cheese.

Yield: About 16 Slices.

Even my kids (who have been making fun of our low carb diet) liked this :). It was very interesting having a 'quick bread' turn out very similar to a yeast bread (more chewy, though). It was easy to make, and I plan on making it again.

Is there any way the sweetener in this recipe could be listed by volume instead of "packets"?

We used sucralose packets in our Bob's Red Mill Low Carb Quick Bread recipe. Each packet contains 1g or 2 tsp. If you were to use a volume measurement, you would want to add 4 Tbsp and 2 tsp.
