Cannellini Bean Cheese Tortellini Soup

  • 4 cups Water
  • 4 oz Cheese Tortellini refrigerated or frozen
  • 1 Onion medium-sized, diced
  • 1 cup Celery diced
  • 1 Green Bell Pepper seeded & diced
  • 1 Zucchini small sized & diced
  • 1 Tomato large sized, diced
  • 8 to 10 Mushrooms large-sized, sliced
  • 1 can Crushed Tomatoes (28oz can)
  • 2 Tbsp Parsley Flakes
  • 2 Tbsp Basil
  • 1 Tbsp Oregano, Mediterranean
  • 1 tsp Thyme
  • 1 tsp Ground Pepper
  • 1/2 tsp Sea Salt
  • 2 cups Cannellini Beans cooked

Directions

Follow basic bean recipe for cooking raw beans.

Heat the oil in a large saucepan and add the onion, celery, bell pepper, zucchini, fresh tomato and mushrooms. Cook over medium heat for 7-10 minutes, stirring occasionally. Add the cooked beans, crushed tomatoes, water and seasonings, reduce the heat and cook for 15 minutes, stirring occasionally. Add the tortellini and cook for 15-25 minutes longer.

Makes 8 servings.

This soup is delicious!! I would suggest using more than 4 ounces of tortellini...it's just not very much. I think I used about a pound.
