Cannellini Bean Cheese Tortellini Soup

  • 4 cups Water
  • 4 oz Cheese Tortellini, refrigerated or frozen
  • 1 medium Onion, diced
  • 1 cup Diced Celery
  • 1 Green Bell Pepper, seeded & diced
  • 1 small Zucchini, diced
  • 1 large Tomato, diced
  • 8-10 Large Mushrooms, sliced
  • 1 Can Crushed Tomatoes (28 oz)
  • 2 Tb Parsley Flakes
  • 2 Tb Basil (Imported)
  • 1 Tb Oregano, Mediterranean
  • 1 tsp Thyme
  • 1 tsp Pepper
  • 1/2 tsp Sea Salt
  • 2 cups cooked Cannellini Beans

Directions

Follow basic bean recipe for cooking raw beans.

Heat the oil in a large saucepan and add the onion, celery, bell pepper, zucchini, fresh tomato and mushrooms. Cook over medium heat for 7-10 minutes, stirring occasionally. Add the cooked beans, crushed tomatoes, water and seasonings, reduce the heat and cook for 15 minutes, stirring occasionally. Add the tortellini and cook for 15-25 minutes longer.

Makes 8 servings.
