Bob's Red Mill Low Carb Muffins

Spruce this basic recipe up with your favorite spices, fruits or nuts!


Step 1

Heat oven to 350°F. Lightly coat muffin tins with spray oil.

Step 2

In a mixing bowl, combine dry ingredients (Low Carb Baking Mix, baking powder and sweetener). Make a well in the center of dry ingredients and add the eggs, water, oil and vanilla. Mix with a fork or whisk until just blended. Take care not to overmix.

Step 3

Divide batter into 8 muffin tins. Bake 22-25 minutes. Serve warm with your favorite butter or cheese.

Makes 8 muffins.

Don't use a fork/whisk, use bread machine or sledge hammer; I doubt this recipe is correct. Cement-like texture. Stars? You'll be seeing them.

This recipe has been tested and the necessary changes have been made. There should no longer be an issue with dense or heavy muffins.

Using the recipe above, we got 10 muffins and they had a good muffin texture - slightly heavier and not so fine-grained as cupcakes. I added a teaspoon of cinnamon and served with butter and a little blackberry jelly and everyone loved them. Not too heavy at all!

Just got done making these and I am in HEAVEN!! Yum! Soft and luscious. Added about 1/4 cup of organic applesauce, a handful of shredded coconut, a couple extra packets of sweetener, lots of cinnamon, and TONS of fresh blueberries. Looking forward to breakfast!

Thank you! I substitute applesauce for sweetener, add some Greek yogurt or peanut butter and blueberries. Makes 10-12 small muffins. I freeze them and enjoy all week long.

The recipe on the package says 1 cup of baking mix!

I have reviewed the label for our Low-Carb Baking Mix and our Bob's Red Mill Low Carb Muffin recipe asks for "2 cups of Low-Carb Baking Mix."

Actually, the earlier comment about one cup of mix is true. The metric label sold in Canada reads 250ml (1 cup). However, it's a happy mistake because using one cup yields a light and fluffy muffin.
I like to add cinnamon and a pinch of freshly ground nutmeg to the batter.

These were very dense and heavy. They needed more sweetener as well. Where can I find the the nutrition information to be sure just how low-carb they are? I'm gonna try them with some fruit and more Splenda next time....after I get the nutritional information.
